The meal includes a variety of traditional Bedouin dishes, such as matfuna (chicken cooked in the ground), makhtom (beef patties), ka’ak (rice with meat), and liba (charcoal bread).
Most of the food is cooked in a zārb – a special desert oven placed in the ground and used to cook meat over coals. The meat is cooked in the zārb for about three hours, resulting in tender, delicious meat full of desert flavors.
